How it works
Each swap is scaled to the amount your recipe calls for. For example:
- Buttermilk: 1 cup milk (minus 1 tbsp) + 1 tbsp lemon juice or vinegar
- 1 egg: 1 tbsp ground flax + 3 tbsp water, or ¼ cup applesauce
- 1 tsp baking powder: ¼ tsp baking soda + ½ tsp cream of tartar
Worked example
Your pancakes need 2 cups buttermilk. Measure 2 cups of milk, remove 2 tbsp, add 2 tbsp lemon juice, stir and wait 5–10 minutes until slightly thickened.
